Main Casserole:
- 1 loaf (about 14 oz) brioche or French bread, cut into 1-inch cubes
- 6 large eggs
- 1 1/2 cups whole milk
- 3/4 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
Streusel Topping:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup cold unsalted butter, cut into cubes
- 1/2 cup chopped pecans (optional)
Instructions
- Prepare the Casserole: Grease a 9×13-inch baking dish. Add the cubed bread in an even layer. In a large bowl, whisk together eggs, milk, pumpkin puree, sugars, vanilla, pumpkin pie spice, and salt. Pour mixture over bread cubes, press gently, cover, and refrigerate for at least 4 hours.
- Make the Streusel Topping: Combine flour, brown sugar, cinnamon. Cut in cold butter until crumbly. Stir in pecans if using.
- Bake: Preheat oven to 350°F. Sprinkle streusel topping over casserole. Bake uncovered for 45–50 minutes until golden and set. Cool for 10 minutes before serving.

- Challah or Texas toast can be used instead of brioche.
