Ingredients
Scale
Cookie Dough
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 4 strawberry or raspberry Pop-Tarts, chopped
- ½ cup white chocolate chips
Filling
- ½ cup strawberry or raspberry jam
Glaze (Optional)
- 1 cup powdered sugar
- 1–2 tablespoons milk
- ½ teaspoon vanilla extract
- Sprinkles
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or lightly grease it to prevent sticking.
- Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2–3 minutes, to ensure a smooth dough base.
- Add Eggs and Vanilla: Beat in the eggs one at a time along with the vanilla extract until fully combined, creating a smooth, cohesive batter.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually incorporate these dry ingredients into the wet mixture until a soft dough forms, being careful not to overmix.
- Fold in Pop-Tarts and Chocolate Chips: Gently fold the chopped Pop-Tarts and white chocolate chips into the dough, distributing them evenly throughout for bursts of flavor.
- Assemble Layers: Spread half of the dough evenly into the bottom of the prepared pan. Warm the strawberry or raspberry jam slightly to make it easier to spread, then layer it evenly over the dough.
- Top with Remaining Dough: Drop spoonfuls of the remaining dough over the jam in patches, then carefully spread it out to cover the jam layer as evenly as possible.
- Bake: Place the pan in the oven and bake for 28–32 minutes or until the top turns a golden brown and the center is just set but not overbaked.
- Cool Completely: Remove from the oven and allow the bars to cool completely in the pan to firm up before adding the glaze or slicing.
- Prepare Glaze: Whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle this glaze over the cooled bars and sprinkle with sprinkles as decoration.
- Set and Serve: Let the glaze set fully before slicing the bars into 16 squares to serve.
Notes
- You can use any Pop-Tart flavor you prefer for variety and customization.
- For firmer bars that hold their shape better, refrigerate the bars before cutting.
- The glaze is optional but adds a beautiful finish and extra sweetness.
