- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 1 cup chopped dill pickles

Instructions
- Melt the butter: In a large pot over medium heat, melt the butter.
- Sauté vegetables: Add the onion and carrots, sauté for 4–5 minutes until softened.
- Add remaining ingredients: Stir in potatoes, broth, bay leaf, salt, and pepper. Bring to a boil, then simmer for 15 minutes.
- Prepare sour cream mixture: In a small bowl, whisk together sour cream and flour until smooth. Slowly stir in hot broth to temper, then whisk back into the soup.
- Finish the soup: Add pickles and juice, cook for 5 minutes. Remove bay leaf, adjust seasoning, stir in fresh dill, and serve.
