Description

Pizza Enchiladas combine the flavors of classic pizza with the comforting format of enchiladas for a fun and family-friendly dinner. Flour tortillas are filled with a savory mixture of mozzarella cheese, pepperoni, Italian sausage, olives, and green bell pepper, then baked with marinara sauce and topped with melted cheese for a gooey, delicious meal that’s perfect for weeknights.

Ingredients

Scale

Filling

  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup sliced pepperoni or mini pepperoni
  • 1/2 cup cooked Italian sausage, crumbled
  • 1/4 cup sliced black olives
  • 1/4 cup diced green bell pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder

Assembly

  • 8 flour tortillas (8-inch)
  • 1 1/2 cups marinara or pizza sauce, divided
  • Chopped parsley or basil for garnish (optional)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Spread Sauce: Pour and spread 1/2 cup of the marinara or pizza sauce evenly over the bottom of the prepared baking dish to create a flavorful base.
  3. Mix Filling: In a mixing bowl, combine 1 cup of shredded mozzarella cheese with the sliced pepperoni, cooked Italian sausage, black olives, diced green bell pepper, Italian seasoning, and garlic powder. Stir well to evenly incorporate all ingredients.
  4. Assemble Enchiladas: Divide the filling mixture evenly among the 8 flour tortillas. Roll up each tortilla tightly and place them seam-side down in the baking dish on top of the sauce layer.
  5. Add Sauce and Cheese Topping: Pour the remaining 1 cup of marinara or pizza sauce evenly over the rolled tortillas. Then, sprinkle the remaining 1 cup of shredded mozzarella cheese evenly over the top.
  6. Bake: Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the cheese is fully melted, golden, and bubbly.
  7. Rest and Garnish: Allow the enchiladas to rest for 5 minutes after baking. Garnish with chopped parsley or basil if desired, then serve warm.
