Ingredients
Scale
Cake
- 1 box yellow cake mix
- 4 large eggs
- ½ cup vegetable oil
- 1 can (20 oz) crushed pineapple with juice
Frosting
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 tub (8 oz) whipped topping (like Cool Whip)
- 1 can (8 oz) crushed pineapple (drained)
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly to prevent the cake from sticking.
- Mix Cake Batter: In a large bowl, combine the yellow cake mix, eggs, vegetable oil, and the entire 20 oz can of crushed pineapple with its juice. Mix thoroughly until the batter is smooth and fully combined.
- Bake the Cake: Pour the batter evenly into the prepared baking dish. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool the Cake: Remove the cake from the oven and let it cool completely in the pan to room temperature before frosting.
- Prepare Frosting: While the cake cools, blend together the instant vanilla pudding mix, drained 8 oz can of crushed pineapple, and whipped topping in a medium bowl. Mix until the frosting is light and fluffy.
- Frost the Cake: Once the cake is completely cooled, spread the prepared frosting evenly over the top of the cake.
- Chill Before Serving: Place the frosted cake in the refrigerator and chill for at least 1 hour. This helps the flavors meld and the frosting set.
Notes
- For an extra layer of texture and flavor, sprinkle shredded coconut or chopped nuts on top of the frosting before chilling.
- This cake is best served cold and tastes even better the next day as the flavors intensify.
- Ensure the cake is fully cooled before frosting to prevent the whipped topping from melting.
