Description

This Pineapple Crisp recipe is a delightful tropical dessert that combines sweet pineapple filling with a crunchy oat topping. Perfect for any occasion, this easy-to-make fruit crisp is a crowd-pleaser that pairs beautifully with a scoop of vanilla ice cream.

Ingredients

Scale

For the filling:

  • 4 cups fresh or canned pineapple chunks (drained if canned)
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • pinch of salt

For the topping:

  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans or shredded coconut (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine pineapple chunks, brown sugar, cornstarch, vanilla extract, cinnamon, and a pinch of salt. Toss until the pineapple is evenly coated, then pour the mixture into a lightly greased 8×8-inch baking dish.
  2. In a separate bowl, mix together oats, flour, brown sugar, cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Stir in pecans or coconut if using.
  3. Sprinkle the topping evenly over the pineapple filling. Bake for 35–40 minutes, or until the top is golden brown and the filling is bubbly. Let cool for 10–15 minutes before serving.

Notes

  • Serve warm with vanilla ice cream or whipped cream.
  • You can use frozen pineapple—just thaw and drain before using.
  • Add a squeeze of lime juice to the filling for a tropical twist.
