Pineapple Cowboy Candy is a vibrant sweet and spicy relish featuring fresh jalapeños and juicy pineapple simmered in a tangy, flavorful syrup with turmeric, ginger, and garlic. This vegan and gluten-free Southern condiment is perfect for adding a zesty kick to burgers, tacos, or charcuterie boards.

Ingredients

Scale

Pineapple Cowboy Candy Ingredients

  • 2 cups sliced jalapeños (fresh, about 810 medium peppers)
  • 1 cup diced fresh or canned pineapple (drained if canned)
  • 1 1/2 cups granulated sugar
  • 1/2 cup apple cider vinegar
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • Pinch of salt

Instructions

  1. Prepare the syrup: In a medium saucepan, combine the granulated sugar, apple cider vinegar, turmeric, ground ginger, garlic powder, and a pinch of salt. Bring the mixture to a boil over medium heat, stirring continuously until the sugar completely dissolves.
  2. Simmer the syrup: Lower the heat to a gentle simmer and cook for about 5 minutes to allow the flavors to meld and the syrup to slightly thicken.
  3. Add jalapeños and pineapple: Stir in the sliced jalapeños and diced pineapple, then continue to simmer for an additional 4 to 5 minutes, stirring occasionally to coat the fruit evenly in the syrup.
  4. Transfer to jar: Using a slotted spoon, carefully remove the jalapeños and pineapple, and place them into a clean glass jar, packing them tightly.
  5. Boil the syrup: Turn the heat back up and bring the remaining syrup to a rolling boil for 2 to 3 minutes more, allowing it to thicken slightly.
  6. Combine and cool: Pour the hot syrup over the jalapeños and pineapple in the jar, ensuring they are fully submerged. Let the jar cool to room temperature before sealing with a lid.
  7. Refrigerate: Place the sealed jar in the refrigerator and let the Cowboy Candy chill for at least 24 hours to develop the rich, balanced flavors before serving.

  • This sweet and spicy condiment enhances the flavor of burgers, hot dogs, tacos, and pairs well with charcuterie boards.
