- Mix Ingredients: In a mixing bowl, combine the Bisquick, sugar, buttermilk, and pimento cheese. Stir until all ingredients are blended smoothly. If the batter feels too thick, add a few more tablespoons of buttermilk to achieve a scoopable consistency.
- Fill Muffin Pan: Using a tablespoon, scoop a heaping amount of the dough into each well of the prepared mini muffin pan, filling nearly to the top.
- Bake: Place the pan in the preheated oven and bake for 10 to 12 minutes, or until the muffins have risen and are golden brown on top.
