- 1 pound ribeye steak, thinly sliced
- 8 slices provolone cheese

- 1 tablespoon butter
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 hoagie rolls, split
Instructions
- Sauté Vegetables: Heat the olive oil and butter in a large skillet over medium-high heat. Add the sliced onions, bell peppers, and mushrooms. Cook for 6–8 minutes, stirring occasionally, until the vegetables are softened and lightly caramelized.
- Cook Steak: Push the vegetables to one side of the skillet and add the thinly sliced ribeye steak to the other side. Season with salt and pepper. Cook for 3–4 minutes, stirring occasionally, until the steak is just cooked through.
- Combine and Melt Cheese: Mix the steak and vegetables together in the skillet. Divide the mixture into four portions and top each with two slices of provolone cheese. Let the cheese melt slightly.
- Prepare Rolls: Meanwhile, lightly toast the hoagie rolls if desired to add crispness and warmth.
- Assemble Sandwiches: Scoop each portion of the steak, vegetable, and melted cheese mixture into the toasted hoagie rolls. Serve the sandwiches hot for best flavor and texture.
