Description

This Perfect Vanilla Frosting Recipe yields a smooth, creamy, and fluffy buttercream that is easy to make and ideal for decorating cakes, cupcakes, and cookies. It features a rich buttery flavor balanced by sweet powdered sugar and pure vanilla extract, with a touch of heavy cream for extra softness.

Ingredients

Scale

Frosting Ingredients

  • 1 1/2 cups (339 g) (3 sticks) unsalted butter, cold
  • 5 cups (650 g) powdered sugar
  • 1 tablespoon (15 ml) pure vanilla extract
  • 2 tablespoons (30 ml) heavy whipping cream (or milk)
  • Pinch of salt (optional)

Instructions

  1. Prepare the Butter: Cut the cold unsalted butter into small pieces to make it easier to whip. Using the paddle attachment of a stand mixer, whip the butter on medium speed for 5-7 minutes, scraping down the bowl occasionally. Continue beating until the butter becomes pale and fluffy, indicating it has incorporated air well.
  2. Add Powdered Sugar and Vanilla: Add 2 cups of powdered sugar to the whipped butter on low speed to avoid a sugar cloud, mixing until it is fully incorporated. Pour in the pure vanilla extract and beat for about 60 seconds to combine all the flavors well.
  3. Incorporate More Sugar: Add an additional 2 cups of powdered sugar gradually while mixing on low speed to prevent splattering. Once mixed, increase the mixer speed to medium-high and beat for 3 minutes to further aerate the frosting, enhancing its light texture.
  4. Finish with Remaining Sugar and Cream: Add the last 1 cup of powdered sugar along with the heavy whipping cream (or milk) and a pinch of salt if desired for balance. Start mixing on low speed until the ingredients begin to combine, then increase to medium-high speed and beat for 3-5 minutes. This final step whips additional air into the frosting, making it fluffy and smooth, perfect for spreading or piping onto your baked goods.

Notes

  • Use cold unsalted butter to achieve the best consistency and light texture for the frosting.
  • If the frosting is too thick, add an extra teaspoon of cream or milk to loosen it slightly.
  • For a stronger vanilla flavor, you can use vanilla bean paste instead of extract.
  • This frosting is best used immediately but can be stored in an airtight container in the refrigerator for up to one week. Rewhip before use.
  • Adjust sugar quantity slightly for sweeter or less sweet frosting depending on preference.
