  • 1 ½ pounds of 80/20 ground chuck
  • 12 slices of deli-style pepperoni
  • 12 slices of provolone cheese

Vegetables

  • 2 tablespoons of garlic paste
  • 1 pack of brioche buns (8 pieces)
  • A can of pre-made pizza sauce

Instructions

  1. Shape the patties and chill: Form your ground chuck into burger patties of even size. Place them in the refrigerator for 35 to 40 minutes to firm up before cooking.
  2. Prepare garlic mayo: Mix the garlic paste thoroughly into the mayonnaise and set it aside. This will be used as a flavorful spread on the buns later.
  3. Sauté vegetables: Dice the red onion and green bell pepper. In a hot cast iron skillet, melt some butter and toss in the veggies with a pinch of salt. Stir continuously for 8 to 10 minutes until the vegetables are soft. Remove from heat and set aside.
  4. Season and grill the patties: Sprinkle both sides of the chilled patties generously with salt, garlic powder, and pepper. Grill them over direct heat for about 6 minutes per side until well browned.
  5. Cook pepperoni: While grilling, heat the cast iron skillet and warm the deli pepperoni slices by cooking each side for approximately 1 to 1.5 minutes until slightly crispy.
  6. Assemble and finish grilling: After flipping the burgers, continue grilling the patties for 2 more minutes. Then layer each patty with pizza sauce, a slice of provolone cheese, and the warmed pepperoni slices. Close the grill lid and cook for an additional 4 minutes, allowing the cheese to melt. Remove burgers and place on a cooling rack briefly.
  7. Toast buns and assemble burger: Lightly toast the brioche buns. Spread the prepared garlic mayo on both cut sides. Place the grilled patty with toppings on the bottom bun, add the sautéed onions and peppers on top, then close with the top bun. Serve immediately and enjoy.
