  • 1 can (28 ounces) whole peeled tomatoes (crushed by hand or lightly blended)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon sugar (optional, to balance acidity)
  • 2 tablespoons chopped fresh parsley or basil
  • grated Parmesan for serving (optional)

Instructions

  1. Cook the penne pasta: In a large pot of salted boiling water, cook the penne pasta until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Sauté garlic and red pepper flakes: Heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes, sauté for 1–2 minutes.
  3. Prepare the sauce: Pour in crushed tomatoes, add salt, black pepper, and sugar if using. Simmer for 10–15 minutes until slightly thickened.
