- 1/4 cup (50 g) brown sugar, packed
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup (60 g) chopped pecans
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin to prevent sticking.
- Make the Crust Dough: In a medium bowl, combine the flour, granulated sugar, and cold cubed butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs, ensuring the butter is well distributed.

- Form Crusts: Press each dough circle into the mini muffin tin cups, shaping them to form a crust that will hold the filling.
- Prepare Filling Mixture: In a small bowl, whisk the egg, light corn syrup, brown sugar, melted butter, and vanilla extract until smooth and fully combined.
- Add Pecans and Fill Crusts: Spoon about 1 teaspoon of chopped pecans into each crust, then pour approximately 1 tablespoon of the filling mixture over the pecans to cover them evenly.
- Bake: Bake the assembled pecan pie bites in the preheated oven for 20-25 minutes, or until the filling is set and the crust turns a golden brown hue.
