Description

These Pecan Pie Bites are delightful mini desserts featuring a buttery, flaky crust filled with a rich, sweet pecan filling. Perfectly portioned for parties or simply satisfying your sweet tooth, these bites combine the classic flavors of pecan pie in a convenient, bite-sized treat. Baked until golden and set, they offer a perfect balance of crisp crust and gooey filling.

Ingredients

Scale

For the Crust

  • 1 1/4 cups (156 g) all-purpose flour
  • 1/2 cup (113 g) unsalted butter, cold and cubed
  • 3 tablespoons granulated sugar
  • 23 tablespoons cold water

For the Filling

  • 1 large egg
  • 1/4 cup (60 ml) light corn syrup
  • 1/4 cup (50 g) brown sugar, packed
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup (60 g) chopped pecans

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin to prevent sticking.
  2. Make the Crust Dough: In a medium bowl, combine the flour, granulated sugar, and cold cubed butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs, ensuring the butter is well distributed.
  3. Add Cold Water: Add cold water one tablespoon at a time, mixing gently just until the dough comes together. Avoid overmixing to keep the crust tender.
  4. Roll and Cut Dough: On a floured surface, roll the dough to 1/8-inch thickness. Use a round cutter or the rim of a glass to cut circles slightly larger than the muffin tin openings for easier pressing.
  5. Form Crusts: Press each dough circle into the mini muffin tin cups, shaping them to form a crust that will hold the filling.
  6. Prepare Filling Mixture: In a small bowl, whisk the egg, light corn syrup, brown sugar, melted butter, and vanilla extract until smooth and fully combined.
  7. Add Pecans and Fill Crusts: Spoon about 1 teaspoon of chopped pecans into each crust, then pour approximately 1 tablespoon of the filling mixture over the pecans to cover them evenly.
  8. Bake: Bake the assembled pecan pie bites in the preheated oven for 20-25 minutes, or until the filling is set and the crust turns a golden brown hue.
  9. Cool: Let the pecan pie bites cool in the pan for 10 minutes to firm up, then transfer them to a wire rack to cool completely and avoid soggy bottoms.
  10. Serve: Serve at room temperature or slightly warmed. Optionally, dust with powdered sugar for an elegant, sweet garnish.

Notes

  • For easier handling, chill the dough for 15-20 minutes before rolling if it becomes too soft.
  • Use a mini muffin pan for uniform bite-sized pies.
  • Adjust the amount of pecans based on your preference for crunch.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These pecan pie bites can also be frozen after baking; thaw at room temperature before serving.
