Instructions

  1. Preheat the oven and prepare baking sheets: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix wet ingredients: In a large mixing bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Shape and bake: Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Use a fork to gently press a crisscross pattern on top of each cookie. Bake for 8–10 minutes, or until the edges are lightly golden.
  6. Cool and serve: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
