Ingredients

Chocolate Coating:
- 2 cups semi-sweet chocolate chips
- 2 tablespoons shortening or coconut oil
Instructions
- In a large mixing bowl, beat together peanut butter, softened butter, and vanilla until smooth.
- Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
- In a microwave-safe bowl, combine chocolate chips and shortening.
- Using a fork or dipping tool, coat each peanut butter ball in chocolate, allowing excess to drip off before placing back on the parchment.
Gradually mix in powdered sugar until fully incorporated. Gently fold in Rice Krispies cereal until evenly distributed.
Refrigerate for at least 30 minutes, or until firm.
Microwave in 30-second intervals, stirring between each, until melted and smooth.
Refrigerate until chocolate is set, about 20 minutes.
