Crust
- 2 (7.5-oz) bags Pepperidge Farm Chessmen Cookies
- 5 Tbsp butter, melted
Ice Cream Filling
- 3 cups sliced peaches (fresh or frozen)
- 2 cups heavy whipping cream
- 1 (14-oz) can sweetened condensed milk
- 1 tsp vanilla extract
Instructions
- Prepare the crust: Finely crush the chessmen cookies using a food processor until you get a fine crumb texture. Combine these cookie crumbs with the melted butter until the mixture is evenly moistened. Press this mixture firmly into the bottom and up the sides of a springform pan to form an even crust layer.
- Make the peach puree: Take 2 cups of the sliced peaches and puree them in a food processor until completely smooth. Set this peach puree aside for folding into the ice cream filling.
- Whip the cream: In a large mixing bowl, whip the heavy whipping cream using a stand mixer or hand mixer until stiff peaks form, indicating the cream holds its shape firmly.
- Combine filling ingredients: Gently fold the sweetened condensed milk, vanilla extract, and the prepared peach puree into the whipped cream, making sure to keep the mixture light and airy without deflating the whipped cream.
- Add fresh peaches: Chop the remaining 1 cup of peach slices into small pieces and fold them carefully into the whipped cream mixture to add texture and fresh peach flavor throughout.
- Assemble and freeze: Spread the ice cream filling evenly over the prepared cookie crust in the springform pan. Cover the top with plastic wrap to prevent freezer burn. Place the pie in the freezer and freeze for at least 6 hours or until fully set.
Notes
- You can use fresh or frozen peaches; if frozen, thaw and drain any excess juice before using.
- For a firmer crust, chill the cookie crust in the fridge for 10-15 minutes before adding the filling.
- Use a sharp knife dipped in warm water to slice the pie easily after freezing.
- To enhance peach flavor, a splash of peach schnapps can be added to the filling (optional).
