For the Cobbler Topping:
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup milk
- 1/2 cup unsalted butter (melted)
Optional: vanilla ice cream or whipped cream for serving
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Prepare the fruit: In a large bowl, combine peaches, blueberries, lemon juice, and 1/4 cup sugar. Set aside.
- Mix the cobbler topping: In another bowl, whisk flour, 1/2 cup sugar, baking powder, salt, and cinnamon. Stir in milk.
- Layer the ingredients: Pour melted butter into a baking dish. Add the batter and top with fruit mixture.
- Bake: Bake for 45–50 minutes until golden brown. Let cool slightly before serving.
Notes
- You can use canned peaches in juice (drained) as a substitute.
- For a crispier topping, sprinkle a tablespoon of sugar over the cobbler before baking.
