Egg Wash

  • 1 tablespoon water
  • 1 teaspoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper

  • 2 cups shredded Parmesan cheese

Cooking Fat

  • 4 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. Prepare Chicken: Cut each chicken breast in half horizontally. If the breasts are very thick, butterfly them by slicing almost in half horizontally, then opening like a book. Place the chicken cutlets between two sheets of plastic wrap and pound them to an even thickness of about ½ inch.
  2. Make Egg Wash: In a shallow bowl, whisk together the egg, water, minced garlic, salt, and black pepper until well blended.
  3. Coat in Parmesan: Put the shredded Parmesan cheese in another shallow bowl. Dip each chicken cutlet in the egg mixture to coat, allowing any excess to drip off. Dredge the chicken in the Parmesan cheese, pressing gently to adhere. Flip the cutlet and repeat on the other side. Shake off any excess cheese.
  4. Cook Chicken: Heat butter and olive oil in a large skillet over medium-high heat. Add the coated chicken cutlets and cook without moving until edges are golden brown and crispy, about 3 minutes. Carefully flip the chicken and cook until golden brown on the other side, another 3 minutes approximately, or until cooked through.
  5. Serve: Transfer the cooked chicken to a serving plate. Garnish with fresh parsley if desired and serve immediately while hot.
