  • 4 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. Prepare Chicken: Cut each chicken breast in half and gently pound each piece to about ½-inch thickness. This ensures even cooking and tender meat.
  2. Prepare Egg Wash: In a shallow bowl, whisk together the egg and water until well blended. Add the minced garlic, salt, and black pepper, then whisk again to combine all ingredients thoroughly.
  3. Coat in Parmesan: Place shredded Parmesan cheese in another shallow bowl. Dip each chicken piece into the egg mixture to coat completely, allowing any excess to drip off. Then dredge the chicken in the Parmesan cheese, pressing gently so the cheese sticks well. Repeat on both sides and shake off any excess cheese.
  4. Pan-Fry: Heat the butter and olive oil together in a large skillet over medium-high heat. Place the coated chicken pieces in the skillet and cook undisturbed for about 3 minutes or until the edges turn golden brown. Press lightly with a spatula, then carefully flip and cook the other side until golden brown as well and the chicken is cooked through.
  5. Serve: Transfer the cooked chicken to a serving plate. Optionally, garnish with freshly chopped parsley for added color and flavor. Serve immediately while hot and crispy.
