  • 1/2 pound ground pork
  • 1 cup finely chopped napa cabbage
  • 2 green onions, thinly sliced
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper

Dumplings & Cooking

  • 24 round dumpling wrappers
  • 2 tablespoons vegetable oil
  • 1/3 cup water

Instructions

  1. Prepare the filling: In a mixing bowl, combine the ground pork, chopped napa cabbage, green onions, soy sauce, sesame oil, grated ginger, minced garlic, salt, and ground white pepper. Mix thoroughly until all ingredients are evenly blended to create a well-seasoned filling.
  2. Assemble dumplings: Place about 1 teaspoon of the filling in the center of each dumpling wrapper. Moisten the edges of the wrapper with water, then fold it in half to form a half-moon shape. Press firmly to seal the edges, pleating as desired to ensure the dumplings are tightly closed.
  3. Heat the skillet: Warm 1 tablespoon of vegetable oil in a large nonstick skillet over medium-high heat until shimmering and hot.
  4. Fry dumplings: Arrange half of the dumplings flat-side down in the skillet, making sure they are tightly packed but not touching too much. Fry for 2 to 3 minutes, or until the bottoms turn golden brown and crisp.
  5. Steam the dumplings: Carefully pour about 1/3 cup of water into the skillet with the dumplings and immediately cover with a lid to trap the steam. Reduce the heat to medium and steam for 5 to 6 minutes until the water has evaporated and the dumplings are fully cooked through.
  6. Crisp the bottoms: Remove the lid and continue cooking the dumplings for an additional 1 to 2 minutes to re-crisp the bottoms.
  7. Repeat and serve: Remove cooked dumplings from the skillet and repeat the frying and steaming steps with the remaining dumplings. Serve the hot dumplings with soy sauce, chili oil, or your preferred dipping sauce.

Notes

  • Ground chicken, turkey, or tofu can be used as a substitute for pork to vary the protein.
  • Dumplings can be frozen before cooking by placing them on a tray to freeze, then storing in a sealed bag; cook from frozen and add a few extra minutes to the steaming time.
