  • 1 cup cherry tomatoes (halved)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon balsamic glaze (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Vegetables: Arrange the trimmed asparagus and cherry tomatoes in a single layer on the sheet. Drizzle with olive oil, then sprinkle with garlic powder, salt, and pepper. Toss gently to coat.
  3. Roast: Roast in the preheated oven for 15–18 minutes, or until the asparagus is tender and slightly golden, and the tomatoes are soft and blistered.
  4. Finish: Remove from the oven and immediately sprinkle with grated Parmesan cheese. Let the cheese melt slightly before transferring to a serving platter. Drizzle with balsamic glaze and garnish with fresh parsley if desired. Serve warm.
