Instructions
- Prepare the crust: Line a muffin tin with 9 paper cupcake liners. In a small bowl, mix the vanilla wafer crumbs and melted butter together until well combined. Press about 1 tablespoon of the mixture into the bottom of each liner to form an even crust layer.
- Make the filling: In a medium bowl, beat the softened cream cheese until smooth. Add powdered sugar, vanilla extract, and orange extract or orange zest, mixing until fully incorporated. Then gently fold in the whipped topping until the mixture is smooth and fluffy. Optionally, add a few drops of orange food coloring to achieve a creamsicle hue.
- Assemble the cheesecakes: Spoon or pipe the cheesecake filling evenly over each crust in the lined muffin tin, smoothing the tops with a spatula or spoon.
- Chill to set: Place the mini cheesecakes in the refrigerator and chill for at least 4 hours, or until the filling is set and firm.
- Add topping and serve: Before serving, top each mini cheesecake with additional whipped topping and garnish with orange zest or sprinkles for a decorative finish.
