This No-Peek Chicken Casserole is a comforting and easy one-pan meal that requires minimal prep time. With tender chicken, flavorful rice, and creamy soups, it’s a family favorite that satisfies everyone’s appetite.

  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of celery soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/2 cups water or low-sodium chicken broth
  • 1 envelope dry onion soup mix
  • 1/2 teaspoon black pepper
  • cooking spray or butter for greasing

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.
  2. Spread the uncooked rice evenly across the bottom of the dish. In a large bowl, whisk together the cream of mushroom, cream of celery, and cream of chicken soups with the water or broth and black pepper.
  3. Pour the mixture over the rice and stir slightly to combine. Place the chicken breasts on top of the rice mixture in a single layer.
  4. Sprinkle the dry onion soup mix evenly over the chicken. Cover the baking dish tightly with aluminum foil.
  5. Bake for 1 hour and 30 minutes without removing the foil — do not peek! After baking, remove from oven and let it sit for 5–10 minutes before serving.

Notes

  • You can use chicken thighs instead of breasts for more flavor.
  • Add frozen peas or chopped mushrooms to the rice mixture for extra veggies.
  • Be sure to keep the foil tightly sealed for best results.
