Description

  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup strawberry jam

For the topping:

  • 1/2 cup Golden Oreo crumbs
  • 1/4 cup freeze-dried strawberries (crushed)
  • Fresh strawberries for garnish (optional)

Instructions

  1. Prepare the crust: In a medium bowl, mix together the Golden Oreo crumbs, crushed freeze-dried strawberries, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the fridge while preparing the filling.
  2. Make the filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the vanilla extract and mix to combine. In a separate bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture and swirl in the strawberry jam.
  3. Assemble the cheesecake: Pour the filling over the prepared crust, smooth the top, and sprinkle the remaining Golden Oreo and strawberry crumb mixture over it.
  4. Chill and serve: Cover and refrigerate for at least 6 hours or overnight until set. Garnish with fresh strawberries before serving, if desired.
