For the crust:
- 1 1/2 cups Golden Oreo cookie crumbs
- 1/4 cup freeze-dried strawberries (crushed)
- 5 tablespoons unsalted butter (melted)
For the filling:
- 2 (8 oz) packages cream cheese (softened)
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream
- 1/4 cup strawberry jam
For the topping:
- 1/2 cup Golden Oreo crumbs
- 1/4 cup freeze-dried strawberries (crushed)
- Fresh strawberries for garnish (optional)
Instructions
- Prepare the crust: In a medium bowl, mix together the Golden Oreo crumbs, crushed freeze-dried strawberries, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the fridge while preparing the filling.
- Make the filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the vanilla extract and mix to combine. In a separate bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture and swirl in the strawberry jam.
- Assemble the cheesecake: Pour the filling over the prepared crust, smooth the top, and sprinkle the remaining Golden Oreo and strawberry crumb mixture over it.
- Chill and serve: Cover and refrigerate for at least 6 hours or overnight until set. Garnish with fresh strawberries before serving, if desired.

- For a firmer crust, freeze for 15–20 minutes before adding the filling.
- Use strawberry preserves for a thicker swirl or add red food coloring for a vibrant pink hue.
