Scale
Cookie Base
- 1 cup rolled oats
- 1/2 cup peanut butter (creamy or crunchy)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
Filling
- 1/2 cup peanut butter
- 2–3 tablespoons powdered sugar (to taste)
Instructions
- Mix the base ingredients: In a bowl, combine the rolled oats, 1/2 cup peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. Mix well until the mixture is cohesive and can be easily formed into shapes.
- Form cookie rounds: Roll the mixture into small balls, then flatten each ball into a cookie-shaped round. Place the rounds on a parchment-lined tray to prepare for assembly.
- Prepare the filling: In a separate bowl, blend 1/2 cup peanut butter with 2 to 3 tablespoons of powdered sugar until the filling is smooth and creamy, adjusting sweetness to taste.
- Assemble the cookies: Spread a small amount of the peanut butter filling onto one cookie round. Then press a second cookie round on top to create a sandwich. Repeat this step for the remaining cookie rounds and filling.
- Chill the cookies: Place the assembled sandwich cookies in the refrigerator and chill for 30 to 60 minutes. This step firms up the cookies for better texture and easier handling.
- Serve and store: Enjoy the cookies chilled or at a cool room temperature. Store any leftovers in a covered container in the refrigerator to keep them fresh.
Notes
- For a vegan option, use maple syrup instead of honey and ensure peanut butter is natural and free from animal products.
- You can substitute peanut butter with almond butter or another nut butter as per preference.
- If the mixture is too sticky, refrigerate it for 10–15 minutes before shaping the cookies.
- Adjust the powdered sugar in the filling based on your desired sweetness level.
- Store cookies properly in the fridge to maintain freshness and prevent the peanut butter filling from melting.
