Cheesecake Filling
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream
- 12 Oreo cookies, crushed
Instructions
- Prepare the Crust: In a food processor, pulse 24 Oreo cookies until they are finely crushed. Add the melted butter and pulse again until the mixture is well combined. Line a mini muffin tin with paper liners and press about 1 tablespoon of the Oreo mixture into each liner to form the crust. Refrigerate the crusts to set while you prepare the filling.
- Prepare the Cheesecake Filling: Beat the softened cream cheese until smooth and creamy. Add the granulated sugar and vanilla extract, mixing until fully incorporated. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture. Carefully fold in the 12 crushed Oreo cookies to distribute them evenly throughout the filling.
- Assemble the Cheesecake Bites: Spoon the cheesecake filling over the prepared Oreo crusts in the mini muffin tin. Use a spatula to smooth and level the tops of each cheesecake bite.
- Chill: Refrigerate the assembled cheesecake bites for at least 4 hours, or until they are fully set and firm to the touch.
