Ingredients
Scale
Dry Ingredients
- 1½ cups granulated sugar
- ½ cup unsweetened cocoa powder
- ¼ teaspoon salt
- 3 cups quick-cooking oats
Wet Ingredients
- ½ cup milk
- ½ cup unsalted butter
- 1 teaspoon vanilla extract
- ½ cup creamy peanut butter (optional but recommended)
Instructions
- Combine Ingredients: In a medium saucepan, combine granulated sugar, unsweetened cocoa powder, milk, unsalted butter, and salt. Stir the mixture frequently to ensure all ingredients are well blended.
- Boil Mixture: Bring the mixture to a full rolling boil over medium heat while continuing to stir frequently. Once boiling, allow it to boil for 1 minute without stirring to activate the setting process.
- Add Remaining Ingredients: Remove the saucepan from heat immediately and stir in the creamy peanut butter (if using), vanilla extract, and quick-cooking oats until the mixture is well combined and uniform.
- Form Cookies: Drop spoonfuls of the cookie mixture onto a parchment-lined baking sheet, spacing them evenly for cooling and setting.
- Cool and Set: Allow the cookies to cool and set at room temperature for 20–30 minutes. This will let them firm up to the desired chewy texture.
Notes
- For firmer cookies, refrigerate for 10–15 minutes after setting at room temperature.
- You can substitute almond butter or sunflower seed butter for a nut-free version.
- Using old-fashioned oats instead of quick-cooking oats provides a chewier texture but may result in a slightly looser set.
