Wet Ingredients

  • 1/2 cup milk
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1 teaspoon vanilla extract

Instructions

  1. Combine heat ingredients. In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder. Stir constantly until the mixture reaches a full rolling boil.
  2. Boil mixture. Allow mixture to boil for exactly 1 minute, stirring to prevent burning. Then, remove from heat promptly.
  3. Add flavorings and oats. Quickly stir in peanut butter, vanilla extract, and a pinch of salt until the mixture is smooth and well combined. Fold in the quick oats to evenly coat them with the chocolate mixture.
  4. Form cookies. Drop spoonfuls of the mixture onto parchment or wax paper-lined baking sheets. Flatten each slightly with the back of the spoon if desired for shape.
