Wet Ingredients
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/2 cup peanut butter (creamy or crunchy)
- 1 teaspoon vanilla extract
Instructions
- Combine heat ingredients. In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder. Stir constantly until the mixture reaches a full rolling boil.
- Boil mixture. Allow mixture to boil for exactly 1 minute, stirring to prevent burning. Then, remove from heat promptly.
- Add flavorings and oats. Quickly stir in peanut butter, vanilla extract, and a pinch of salt until the mixture is smooth and well combined. Fold in the quick oats to evenly coat them with the chocolate mixture.
- Form cookies. Drop spoonfuls of the mixture onto parchment or wax paper-lined baking sheets. Flatten each slightly with the back of the spoon if desired for shape.
- Set cookies. Allow the cookies to sit at room temperature for 20 to 30 minutes, or until they are set and firm to the touch.
