Meatloaf:
- 1 ½ pounds ground beef
- 1 cup finely chopped mushrooms
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 cup shredded Swiss cheese
- ¾ cup breadcrumbs
- 2 large eggs
- ¼ cup milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme

- ¼ cup ketchup
Instructions
- Preheat the oven: Preheat the oven to 350°F and prepare a baking sheet with parchment paper or a greased loaf pan.
- Sauté vegetables: In a skillet, sauté mushrooms, onion, and garlic until softened. Set aside to cool.
- Mix ingredients: In a bowl, combine ground beef, sautéed vegetables, Swiss cheese, breadcrumbs, eggs, milk, Worcestershire sauce, salt, pepper, and thyme.
- Shape and bake: Shape mixture into a loaf on the baking sheet or in a loaf pan. Top with ketchup and bake for 55–65 minutes until cooked through.
- Rest and serve: Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- For extra cheesiness, add slices of Swiss cheese on top during the last 10 minutes of baking.
- Ground turkey or chicken can be substituted for beef.
