  • 1 tablespoon unsalted butter
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 lb cremini or white mushrooms (sliced)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1/2 cup sour cream
  • 8 oz egg noodles or pasta of choice
  • chopped fresh parsley for garnish

Instructions

  1. Cook the noodles: Cook the noodles according to package directions, then drain and set aside.
  2. Sauté onion and garlic: In a large skillet, heat olive oil and butter. Sauté onion until softened, then add garlic and cook briefly.
  3. Cook mushrooms: Add mushrooms and cook until browned. Season with paprika, thyme, salt, and pepper.
  4. Thicken the sauce: Sprinkle flour over mushrooms, then pour in vegetable broth and soy sauce. Simmer until thickened.
  5. Finish the sauce: Remove from heat and stir in sour cream until smooth. Add cooked noodles and toss to coat.
  6. Serve: Garnish with parsley and serve hot.
