  • 1 pound beef stew meat (cut into 1-inch cubes)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 3 carrots (peeled and sliced)
  • 2 celery stalks (sliced)
  • 2 potatoes (peeled and diced)
  • 1 cup green beans (cut into 1-inch pieces)
  • 1 (14.5 oz) can diced tomatoes (with juices)
  • 4 cups beef broth
  • 1 cup water
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce
  • 1 cup frozen corn
  • 1 cup frozen peas

Instructions

  1. Heat the oil: In a large pot or Dutch oven, heat the oil over medium-high heat.
  2. Brown the beef: Add the beef stew meat and brown on all sides, about 5–7 minutes. Remove the beef and set aside.
  3. Cook the aromatics: In the same pot, add the onion and garlic, cooking for 2–3 minutes until softened.
  4. Add vegetables and beef: Stir in the carrots, celery, and potatoes. Return the browned beef to the pot.
  5. Add remaining ingredients: Add green beans, diced tomatoes, beef broth, water, salt, pepper, thyme, and Worcestershire sauce.
  6. Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours.
  7. Finish: In the final 10 minutes, stir in frozen corn and peas. Adjust seasoning and serve.
