Brownie Base:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Mint Layer:

  • 2 cups powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • 2–3 drops green food coloring (optional)

Chocolate Glaze:

  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions

  1. Brownie Base: Preheat oven to 350°F (175°C). Grease and line an 8×8-inch pan. Melt butter, mix in sugar, eggs, and vanilla. Stir in cocoa powder, flour, baking powder, and salt. Spread batter in pan and bake for 20–25 minutes. Cool.
  2. Mint Layer: Beat powdered sugar, butter, milk, peppermint extract, and food coloring until smooth. Spread over brownie base. Refrigerate for 30 minutes.
  3. Chocolate Glaze: Melt chocolate chips and butter until smooth. Spread over mint layer. Refrigerate until firm. Slice and serve.

  • For a stronger mint flavor, add extra peppermint extract.
