Fried Tortillas

Meat and Sauce

- 1 pound ground beef
- 1 tablespoon taco seasoning
- 2 cups enchilada sauce (or use taco sauce)

- 2 cups refried beans (warmed, from a 16-ounce can)
- 8 ounces cheddar cheese (shredded)

Instructions
- Fry Tortillas: Heat vegetable oil in a pan over medium heat. Fry the corn tortillas in batches, 1-2 at a time, turning each side for 2-3 minutes until golden brown and crispy.
- Drain and Season: Remove tortillas and place on paper towels to absorb excess oil. Lightly season with salt.
- Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the pizzas later.
- Cook Ground Beef: In a pan, heat 1 teaspoon vegetable oil over medium heat. Add ground beef and cook, stirring occasionally, until fully browned, about 6-7 minutes.
- Simmer Meat: Stir in taco seasoning and 1/4 cup water with the beef. Reduce heat and simmer for 10 minutes to blend flavors.
- Assemble Base: Place 8 of the crispy tortillas on a baking sheet as the pizza bases.
- Add Sauce, Beans, and Meat: Spread enchilada sauce over each tortilla, then layer with warmed refried beans and taco-seasoned ground beef.
- Layer with Tortillas and Cheese: Top each with another crispy tortilla, spread more enchilada sauce on top, and sprinkle shredded cheddar cheese evenly.
- Bake Pizzas: Bake in the preheated oven for about 10 minutes or until cheese has melted and is bubbly.
- Garnish and Serve: Remove from oven and top with diced tomatoes, sliced black olives, green onions, and hot sauce to taste. Serve immediately.
