Description

A comforting and hearty Mexican Chicken & Rice Cobbler featuring a savory biscuit topping baked over a flavorful mixture of seasoned chicken and Mexican rice, perfect for a family-friendly dinner.

Ingredients

Scale

For the Biscuit Topping

  • 4 Tbsp butter
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1½ tsp taco seasoning

For the Filling

  • 2 cups chopped cooked chicken
  • 2 cups cooked Mexican or Spanish rice
  • 2 cups chicken broth
  • Black pepper to taste

Instructions

  1. Preheat: Preheat your oven to 350ºF (175ºC) to prepare for baking the cobbler.
  2. Melt Butter: Place butter in a 9×9-inch baking dish and put it in the preheated oven until melted. Carefully remove the dish from the oven once the butter has fully melted.
  3. Make Biscuit Batter: Whisk together the all-purpose flour, baking powder, salt, milk, and taco seasoning in a bowl until you achieve a smooth batter. Pour this batter over the melted butter in the baking dish, allowing it to spread evenly.
  4. Prepare Filling: In another bowl, combine the chopped cooked chicken, cooked Mexican or Spanish rice, chicken broth, and black pepper. Mix well to ensure the ingredients are evenly distributed.
  5. Assemble Cobbler: Spoon the chicken and rice mixture into the center of the baking dish so that the batter forms a ring around the edges, encasing the filling.
  6. Bake: Bake the cobbler in the preheated oven for 50 minutes to 1 hour, or until the biscuit topping is golden brown and cooked through.
  7. Rest and Serve: Remove from the oven and let the cobbler stand for five minutes before serving to allow it to set slightly.

Notes

  • You can use rotisserie chicken or leftover cooked chicken for convenience.
  • For spicier flavor, increase the taco seasoning or add a pinch of cayenne pepper.
  • Substitute milk with a dairy-free alternative if desired.
  • Ensure the rice is cooked before assembling; leftover rice works great.
  • This dish pairs well with a fresh salad or steamed vegetables for a balanced meal.
