- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup milk
- 1½ tsp taco seasoning

- 2 cups cooked Mexican or Spanish rice
- 2 cups chicken broth
- Black pepper to taste
Instructions
- Preheat: Preheat your oven to 350ºF (175ºC) to prepare for baking the cobbler.
- Melt Butter: Place butter in a 9×9-inch baking dish and put it in the preheated oven until melted. Carefully remove the dish from the oven once the butter has fully melted.
- Make Biscuit Batter: Whisk together the all-purpose flour, baking powder, salt, milk, and taco seasoning in a bowl until you achieve a smooth batter. Pour this batter over the melted butter in the baking dish, allowing it to spread evenly.
- Prepare Filling: In another bowl, combine the chopped cooked chicken, cooked Mexican or Spanish rice, chicken broth, and black pepper. Mix well to ensure the ingredients are evenly distributed.
- Assemble Cobbler: Spoon the chicken and rice mixture into the center of the baking dish so that the batter forms a ring around the edges, encasing the filling.
- Bake: Bake the cobbler in the preheated oven for 50 minutes to 1 hour, or until the biscuit topping is golden brown and cooked through.
- Rest and Serve: Remove from the oven and let the cobbler stand for five minutes before serving to allow it to set slightly.
