Description

These Meatball Monster Sandwiches are a fun and delicious party treat, featuring tender meatballs simmered in rich spaghetti sauce, nestled in toasted whole wheat mini buns and topped with pimento-stuffed olive “eyeballs”. Perfect for a quick appetizer or kid-friendly snack with a playful twist.

Ingredients

Scale

Meatballs and Sauce

  • 24 frozen precooked meatballs
  • 2 cups spaghetti or pasta sauce

Buns and Toppings

  • 12 mini whole wheat sandwich buns
  • 3 tablespoons softened butter
  • 24 pimento-stuffed olive slices

Instructions

  1. Prepare the Meatballs: In a medium saucepan, combine the frozen meatballs and spaghetti sauce. Bring to a simmer over low heat, stirring frequently to prevent burning.
  2. Heat the Meatballs: Cook the meatballs until they are fully heated through, about 6-7 minutes. If the sauce begins to stick to the pan, add 1-2 tablespoons of water to loosen it up.
  3. Set Aside: Once heated, remove the saucepan from heat, cover, and set aside to keep warm.
  4. Toast the Buns: Cut the sandwich buns in half. Spread softened butter evenly on each cut side.
  5. Broil or Bake the Buns: Toast the buns in the oven or under the broiler until they turn a light golden brown, watching carefully to avoid burning.
  6. Assemble the Monster Sandwiches: Place two warm meatballs topped with a spoonful of sauce on the bottom half of each toasted bun.
  7. Add the ‘Eyeballs’: Top each meatball with a slice of pimento-stuffed olive to resemble “eyeballs.”
  8. Complete the Monster Face: Add the top half of the bun at an angle on top of the meatballs to create a “monster face.” Secure with a toothpick if needed, but be sure to remove toothpicks before serving.
  9. Serve: Serve the sandwiches immediately while warm and enjoy the fun monster-themed snack.

Notes

  • Use mini whole wheat buns for a healthier touch and perfect size.
  • If you don’t have pimento-stuffed olives, you can slice regular olives and add a small piece of roasted red pepper.
  • Adding a splash of water during cooking helps keep the sauce from sticking or burning.
  • These meatball sandwiches are great for parties, especially Halloween or kid-friendly events.
  • To speed up preparation, you can warm the meatballs and sauce in a microwave before simmering on the stove.
