Instructions

  1. Cook Sausage: Brown the breakfast sausage in a skillet over medium-high heat until fully cooked and no longer pink inside. Drain off any excess grease thoroughly and set the sausage aside to cool slightly.
  2. Make Batter: Prepare the pancake batter by mixing 2 cups of Hungry Jack Pancake Mix with 1 ½ cups of water according to the package directions. Once smooth, fold the cooked sausage, shredded cheddar cheese, and ¼ cup of maple syrup into the batter, mixing until evenly combined.
  3. Bake: Preheat your oven to 400°F (200°C). Lightly grease a mini muffin pan to prevent sticking. Spoon the batter into each mini muffin cup, filling them about 3/4 full to allow room for rising. Bake in the preheated oven for 12 to 15 minutes or until the bites are golden brown on top and a toothpick inserted comes out clean.
