Description

Cool off with these delicious and creamy Mango Lassi Popsicles, a refreshing frozen treat inspired by the popular Indian beverage. Made with ripe mangoes, tangy Greek yogurt, and a hint of cardamom, these popsicles are a perfect way to beat the summer heat.


Ingredients

Ripe Mango Chunks:

2 cups

Plain Greek Yogurt:

1 cup

Whole Milk:

1/2 cup

Honey:

2–3 tablespoons (to taste)

Ground Cardamom:

1/2 teaspoon

Lemon Juice:

1 teaspoon (optional, for brightness)


Instructions

  1. Blend Ingredients: In a blender, combine the mango chunks, Greek yogurt, milk, honey, cardamom, and lemon juice (if using). Blend until smooth and creamy.
  2. Adjust Sweetness: Taste and adjust sweetness if needed.
  3. Fill Molds: Pour the mixture into popsicle molds, tapping lightly to remove air bubbles.
  4. Freeze: Insert sticks and freeze for at least 6 hours or until fully set.
  5. Release Popsicles: To release, run warm water over the outside of the molds for a few seconds before pulling out the popsicles.

Notes

  • For a dairy-free version, substitute coconut yogurt and almond or coconut milk.
  • You can also swirl in extra yogurt before freezing for a marbled look.
