Description

Delight in these Low Sugar Lemon Poppy Seed Greek Yogurt Bars, a tangy and moist treat featuring bright lemon flavor, crunchy poppy seeds, and the creamy richness of Greek yogurt. Perfect as a healthy snack or light dessert, these bars offer a balanced sweetness with natural honey or maple syrup and are made with wholesome almond and oat flours.

Ingredients

Scale

Wet Ingredients

  • 1 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

Dry Ingredients

  • 1/2 cup almond flour
  • 1/4 cup oat flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup poppy seeds

Instructions

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper to prevent sticking and allow easy removal of the bars once baked.
  2. Mix Wet Ingredients: In a medium bowl, whisk together the Greek yogurt, honey or maple syrup, lemon juice, lemon zest, and vanilla extract until the mixture is smooth and well combined, ensuring an even distribution of flavors.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the almond flour, oat flour, baking soda, and salt. This helps to evenly distribute the leavening agent and salt throughout the flour mixture.
  4. Mix Together: Gradually add the dry ingredient mixture into the wet ingredients, stirring gently until just combined. Be careful not to overmix to maintain a tender texture. Fold in the poppy seeds evenly throughout the batter.
  5. Bake: Pour the batter into the prepared baking pan, spreading it out evenly with a spatula. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean, indicating the bars are fully cooked.
  6. Cool & Serve: Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift them out using the parchment paper and cut into 12 squares. Serve at room temperature for a delightful snack or dessert.

Notes

  • For a vegan option, replace Greek yogurt with a plant-based yogurt and use maple syrup instead of honey.
  • Ensure not to overbake to keep the bars moist and tender.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • These bars can be frozen for up to 2 months; thaw overnight in the refrigerator before serving.
  • Almond flour can be substituted with other nut flours, but may slightly alter texture and flavor.
