Ingredients
Base Ingredients
- 1½ cups mashed cooked sweet potato (about 1 large or 2 small)
- 1 (15-ounce) can black beans (drained and rinsed)
- ½ cup breadcrumbs (regular or gluten-free)
- ¼ cup finely chopped red onion
- 2 cloves garlic (minced)
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Zest and juice of 1 lime
- 2 tablespoons olive oil (for cooking)
Optional Toppings
- Avocado slices
- Sour cream or Greek yogurt
- Extra lime wedges
Instructions
- Prepare the Patty Mixture: In a large bowl, mash the black beans with a fork or potato masher, leaving some texture for bite. Add the mashed sweet potato, breadcrumbs, finely chopped red onion, minced garlic, chopped fresh cilantro, ground cumin, smoked paprika, salt, black pepper, lime zest, and half of the lime juice. Stir thoroughly until all ingredients are combined into a consistent mixture.
- Form Patties: Shape the mixture into 6 to 8 even patties. If the mixture feels too soft or sticky to handle, place the patties in the refrigerator to chill for 15 to 20 minutes; this will help them firm up for cooking.
- Cook Patties on Stovetop: Heat the olive oil in a large nonstick skillet over medium heat. Carefully add the patties and cook for 3 to 4 minutes on each side, or until they develop a golden-brown, crisp exterior and are heated through on the inside.
- Add Final Lime Drizzle and Serve: Once cooked, remove the patties from heat and drizzle with the remaining lime juice to enhance their fresh, citrusy flavor. Serve the patties warm, topped with your choice of avocado slices, sour cream or Greek yogurt, and additional lime wedges. They also pair wonderfully over a salad or with a rice bowl.
Notes
- To bake the patties instead of frying, place them on a parchment-lined baking sheet and bake at 400°F for 20 to 25 minutes, flipping halfway through cooking to ensure even browning.
- These patties freeze well, making them perfect for meal prep. Freeze cooked patties in an airtight container and reheat when ready to enjoy.
- Use gluten-free breadcrumbs to make the recipe suitable for gluten-free diets.
