Description

Libby’s Pumpkin Bread is a moist and flavorful quick bread perfect for autumn and holiday seasons. Made with Libby’s 100% Pure Pumpkin, warm spices like cinnamon, nutmeg, and cloves, and a tender crumb from oil and eggs, this recipe yields two delicious loaves that are perfect for breakfast, snacks, or dessert.

Ingredients

Scale

Dry Ingredients

  • 3 ½ cups all-purpose flour
  • 3 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger

Wet Ingredients

  • 1 cup vegetable oil
  • 4 large eggs
  • 1 (15-ounce) can Libby’s 100% Pure Pumpkin
  • 2/3 cup water

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans to prevent sticking.
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking soda, salt, cinnamon, nutmeg, cloves, and ginger until evenly mixed.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the vegetable oil, eggs, Libby’s pumpkin puree, and water until the mixture is smooth and well combined.
  4. Combine Wet and Dry Ingredients: Gradually add the wet ingredients into the dry ingredients. Stir gently until just combined, taking care not to overmix to ensure a tender bread.
  5. Bake: Divide the batter evenly between the prepared loaf pans. Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the loaves comes out clean.
  6. Cool: Allow the loaves to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely before slicing and serving.
