Ingredients
Cake:
1 cup unsalted butter, softened; 1 cup granulated sugar; 4 large eggs; 1 teaspoon vanilla extract; 2 cups all-purpose flour; 2 teaspoons baking powder; 1/2 cup whole milk
Chocolate Coating:
3 1/2 cups powdered sugar; 1/3 cup unsweetened cocoa powder; 3/4 cup boiling water; 2 tablespoons unsalted butter, melted
Assembling:
2 1/2 cups desiccated coconut
Instructions
- Prepare the Cake: Preheat the oven to 350°F and grease a 9×13-inch baking pan. Cream butter and sugar, add eggs one at a time, mix in vanilla. Combine flour and baking powder. Alternately add dry ingredients and milk to the wet mixture. Bake for 25–30 minutes, then cool and cut into squares.
- Make the Coating: Sift powdered sugar and cocoa powder, add boiling water and butter. Dip cake squares in the chocolate mixture, then coat with coconut.
Notes
- Freezing the cake squares briefly makes them easier to dip.
- Lamingtons are traditionally served plain, but you can sandwich two with jam or whipped cream for a twist.
- Store in an airtight container at room temperature for up to 3 days.
