Ingredients
Scale
For the Crust
- 1 1/2 cups graham cracker crumbs (about 12 full sheets, crushed)
- 1/3 cup granulated sugar
- 6 tablespoons butter, melted
For the Filling
- 2 (14-ounce) cans sweetened condensed milk
- 4 ounces cream cheese, softened
- 3/4 cup key lime juice*
- Zest of 2 regular limes or 4 key limes
For Serving
- Fresh whipped cream, for topping (optional)
Instructions
- Make Crust: Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press the mixture evenly into the bottom of an 8-inch square baking pan to form the crust. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from oven and allow to cool completely before adding the filling.
- Prepare Filling: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sweetened condensed milk, lime juice, and lime zest. Mix thoroughly until the filling is smooth and well combined.
- Bake Filling: Pour the lime filling over the cooled crust, spreading evenly. Return the pan to the oven and bake at 350°F (175°C) for an additional 10 minutes, allowing the filling to set slightly.
- Cool and Chill: Remove the bars from the oven and let cool at room temperature for about 30 minutes. Then, refrigerate the bars for at least 3 hours to firm up and enhance flavors.
- Serve: Once chilled, cut into bars and optionally top with fresh whipped cream before serving. Enjoy your refreshing and tangy key lime pie bars!
Notes
- Key lime juice can be substituted with regular lime juice if key limes are not available.
- Ensure the cream cheese is softened to avoid lumps in the filling.
- For best results, use a fine grater to zest the limes avoiding the bitter white pith.
- Bars can be stored covered in the refrigerator for up to 4 days.
- Optional whipped cream enhances richness but can be omitted for a lighter dessert.
