Cheese Crisps:
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese

Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix cheeses: In a small bowl, mix the cheddar and mozzarella cheeses together.
- Form cheese mounds: Scoop about 1 tablespoon of the cheese mixture onto the prepared baking sheet, spacing each mound at least 1 inch apart. Flatten slightly into circles.
- Add pepperoni: Place one slice of pepperoni on top of each cheese mound. Sprinkle lightly with Italian seasoning if desired.
- Bake: Bake for 8–10 minutes, or until the edges are golden and crispy.
