Description

John Wayne Casserole is a hearty and flavorful baked dish featuring a savory ground beef and vegetable filling layered under a biscuit crust, topped with a creamy chive cheese spread and a blend of melted mozzarella and cheddar cheese. Perfect for a comforting family meal, this casserole brings together classic Tex-Mex flavors with an easy-to-make biscuit topping.

Ingredients

Scale

Filling Ingredients

  • 1 lb lean ground beef
  • 1 cup diced yellow onion
  • 20 oz Rotel diced tomatoes and green chilies, drained
  • 12 oz canned corn, drained
  • 1 oz taco seasoning (about 23 tablespoons)
  • 1 cup water

Biscuit Crust

  • 3 cups Bisquick mix
  • 1 cup water

Cream Cheese Topping

  • 7.5 oz Philadelphia whipped chive cream cheese
  • 1/2 cup mayonnaise
  • 1 tbsp garlic powder
  • 1/2 tsp salt

Cheese Topping

  • 2 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat oven: Set your oven to 325°F (163°C) to prepare for baking the casserole.
  2. Cook ground beef: In a large sauté pan over medium-high heat, add the ground beef and crumble it as it cooks until browned. Drain excess grease from the pan.
  3. Add seasonings and vegetables: Stir in 1 cup water and taco seasoning, then simmer for 4 minutes. Add diced onions, drained Rotel tomatoes and green chilies, and canned corn. Mix well, reduce heat to low, and keep warm.
  4. Prepare biscuit crust: In a mixing bowl, combine 3 cups Bisquick mix and 1 cup water, stirring until a sticky dough forms. Grease a 9×13-inch baking dish, then spread the dough evenly as the bottom layer.
  5. Assemble layers: Pour the cooked ground beef mixture evenly over the biscuit crust. In a separate bowl, cream together cream cheese, mayonnaise, garlic powder, and salt until smooth. Dollop and spread this mixture evenly over the beef layer. Finally, sprinkle the shredded mozzarella and cheddar cheese blend on top.
  6. Bake: Place the assembled casserole in the preheated oven and bake for 40 minutes or until bubbly and golden on top.
  7. Serve: Remove the casserole from the oven and let it sit for a few minutes to set before slicing and serving.

Notes

  • Ensure the excess grease is drained after browning the beef to keep the casserole from becoming too oily.
  • Using whipped chive cream cheese adds a nice flavor and creaminess to the dish, but plain cream cheese can be substituted if needed.
  • Let the casserole rest before serving to help it firm up and make slicing easier.
  • This dish pairs well with a fresh green salad or steamed vegetables for a balanced meal.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
