Instructions

  1. Mix the filling: In a mixing bowl, combine corn, chopped jalapeños, shredded cheddar cheese, softened cream cheese, garlic powder, salt, and black pepper. Stir well until all ingredients are evenly incorporated.
  2. Shape and freeze: Scoop tablespoon-sized portions of the mixture and form into small balls or nuggets. Place them on a parchment-lined baking sheet and freeze for 20–30 minutes or until firm to help maintain shape during breading and frying.
  3. Prepare breading station: Set up three shallow bowls: one with all-purpose flour, the second with beaten eggs, and the third with breadcrumbs. This setup allows for an even and consistent breading process.
  4. Bread the nuggets: Take each frozen nugget and dredge it first in the flour, then dip it in the beaten eggs, and finally coat it thoroughly with the breadcrumbs. This triple coating ensures a crispy golden crust when fried.
  5. Heat oil and fry: Pour about 2 inches of vegetable oil into a deep skillet or saucepan and heat it over medium-high heat to 350°F (175°C). Fry the nuggets in batches, cooking each side for 2–3 minutes or until golden brown and crispy.
