Almond-Orange Cake:

- juice of 1 orange (about 1/4 cup)
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy removal.
- Prepare the batter: In a large bowl, whisk together almond flour, sugar, baking powder, and salt. In a separate bowl, whisk the eggs, olive oil, orange zest, orange juice, and vanilla until smooth.
- Combine and bake: Add the wet ingredients to the dry ingredients and mix until fully combined. Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Cool and serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving. Garnish with sliced almonds or candied orange peel if desired.
