Ingredients
Scale
Filling
- 2 cups fresh blueberries (or thawed frozen)
- 1/4 cup granulated sugar
- 1 tsp lemon juice
- 1/2 tsp cinnamon (optional)
Dough & Topping
- 1 sheet puff pastry (thawed)
- 1 egg (for egg wash)
Instructions
- Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and let it preheat while you prepare the pies. This ensures even cooking and a crispy crust.
- Prepare the Blueberry Filling: In a mixing bowl, combine the fresh or thawed blueberries with granulated sugar, lemon juice, and cinnamon if using. Stir gently to mix and set aside to allow the flavors to meld.
- Roll and Cut Puff Pastry: Lightly flour a clean surface and roll out the thawed puff pastry sheet. Cut the dough into even squares, about 3 to 4 inches each, to make individual hand pies.
- Fill and Seal the Pies: Spoon a generous amount of the blueberry filling onto the center of each pastry square. Fold the dough over to form a triangle or rectangle, then press the edges together firmly using a fork to seal and prevent leaking during cooking.
- Apply Egg Wash: Beat the egg in a small bowl and brush it over the top of each sealed pie. This will give the pies a beautiful golden and shiny finish after air frying.
- Air Fry the Pies: Arrange the hand pies in a single layer in the air fryer basket, making sure they are not overcrowded to allow proper air circulation. Cook for 10-12 minutes until the pastries are puffed up and golden brown.
- Cool and Serve: Carefully remove the pies from the air fryer and let them cool for a few minutes before serving warm. Enjoy them as a delightful breakfast or dessert treat!
Notes
- You can use frozen blueberries if fresh are unavailable; just thaw them first.
- For extra flavor, add a pinch of cinnamon or vanilla extract to the filling.
- Make sure to not overfill the pastries to avoid bursting during air frying.
- If you don’t have an air fryer, these can be baked in an oven at 400°F (200°C) for 15-17 minutes.
- Brush with milk or cream if you prefer a dairy-based wash instead of egg wash.
