Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Prepare Cheese Mixture: In a mixing bowl, combine the grated paneer, shredded mozzarella, chopped cilantro, finely chopped green chili if using, garam masala, red chili powder, cumin seeds, and a pinch of salt. Stir well to evenly distribute all spices and herbs.
  3. Roll Pastry: Lightly flour a clean work surface and roll out the thawed puff pastry sheet into a rectangle approximately 10×12 inches, creating enough surface area to spread the filling.
  4. Fill and Fold: Spread the cheese mixture evenly over half of the puff pastry sheet. Then fold the other half of the pastry over the filling to cover it completely. Gently press the edges to seal the filling inside.
  5. Cut and Twist: Using a sharp knife or pizza cutter, cut the folded pastry into 1-inch wide strips. Take each strip and twist it several times to create the signature twisted appearance.
  6. Arrange and Glaze: Place the twisted strips on the prepared baking sheet, spacing them apart to allow for expansion during baking. Brush the tops with beaten egg or milk to give a golden and shiny finish once baked.
