Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the dry ingredients: Pulse the oats in a food processor briefly. In a bowl, whisk together oats, flour, baking powder, baking soda, cinnamon, and salt.
- Make the cookie dough: Cream butter with sugars until fluffy. Add egg and vanilla. Gradually mix in dry ingredients.
- Bake the cookies: Scoop dough onto baking sheet, flatten, and bake for 10–12 minutes.
