Instructions

  1. Prepare the Crust: In a large mixing bowl, whisk together the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, mixing until the dough comes together. Divide into two disks, wrap in plastic, and refrigerate for at least 1 hour.
  2. Make the Filling: Combine cherries, sugar, cornstarch, lemon juice, and vanilla in a bowl, tossing until coated.
  3. Assemble the Pie: Preheat oven to 400°F (200°C). Roll out one dough disk to fit a 9-inch pie dish, transfer dough, fill with cherry mixture, dot with butter, cover with second dough disk or lattice top. Seal, crimp edges, cut slits, brush with egg wash, sprinkle with sugar. Bake at 400°F for 20 minutes, then reduce to 375°F and bake for 35–40 minutes.
  4. Cool and Serve: Cool for 2 hours before slicing.
